A Scone Recipe Fit For a Queen

Calling all high tea lovers. Are you constantly on the hunt for that perfect scone recipe? No? Well that's a pity because this one is great!



This weekend being the Queen's Birthday long weekend it has been a nice chance to catch up with my sister, Anna. What better way to celebrate the Queen's Birthday than with tea and scones. 

Today my sister and I received a scone master class from Anna's lovely friend Jenna. We worked from a Women's Weekly recipe from a few years back and modified it as we saw fit. This is our version of that recipe!


You will need:
  • 2 1/5 cups Self-Raising Flour
  • (Good) pinch of Salt
  • 30g Butter
  • 1 1/4 cups of Milk
  • 1 teaspoon Vinegar
  • 1 tablespoon sugar (if you want savoury scones you can decrease this amount to 1 teaspoon)
What to do:
  1. Mix your milk with your vinegar and leave to sit for 10 minutes. This will turn the milk into butter milk!
  2. Preheat the oven to 250°C.
  3. Sift the flour into bowl and stir in sugar and salt. 
  4. Cut up the butter, add it to the flour mixture and rub it in with fingertips until the texture is like that of fine breadcrumbs. You can add dried fruit at this point in time if that floats your boat.
  5. Make hole in centre of flour. Slowly pour in the "butter milk" and combine the mixture with a knife in a chopping motion (this is key)! Continue until everything is combined and slightly sticky.
  6. Flour a bench surface, turn out the scone mix onto it and knead lightly.
  7.  Roll out the scone mix with a floured rolling pin to 2-3cm thickness. Flour a cookie cutter or a drinking glass and begin cutting out the scones! Try to use all of the mixture without working it too much!
  8. Place the cut scones close together on a greased or lined baking tray. Feel free to brush with milk to help create that perfect golden brown top!
  9. Bake in oven for 15 minutes.
  10. Enjoy warm with butter, jam, cream, tea and good company!

  2. Mmm this looks like an amazing recipe to try and taste! I only wish I had more high teas with my girlfriends-- sadly, since we lack the skills or time to make such lovely treats, we usually have to fork out quite a bit of money for each high tea date. You're so lucky that you have the know-how and opportunity to enjoy such a wonderful experience with much less cost :)

    1. It can be really hard to find the time or energy to make things, especially when you're busy! I was lucky that the other two did all of the baking and i just joined in for the eating bit!
      But going out for high tea sounds so lovely! That would be even nicer in some ways because you wouldn't have to lift a finger :)
