Pumpkin, Rosemary and Feta Loaf Recipe

So the other day my Dad brought home this amazing piece of Pumpkin and Feta bread from a market. Because it was so expensive he could only justify buying the one piece, BUT he had hatched a cunning plan!

Feeling like detectives we slaved away studying this Pumpkin bread. So read on if you would like to find out how we made our version of this tasty treat! 

 We were soon sure that it had:
  • rosemary, 
  • sugar, 
  • caraway, 
  • eggs 
  • and self raising flour.
Along with the obvious ingredients of Feta cheese and Pumpkin. 

We um-d and ah-d about whether or not the recipe was based on a bread or a scone recipe and finally decided that no bread was ever so moist. 

So now we knew that we needed a scone recipe with added rosemary, feta and caraway spice.

So without further ado here is our recipe (with a few alterations)!

  • 2 Cups Self Raising Flour
  • 1 Tablespoon Unrefined Brown Sugar (You can use normal sugar but I would suggest using brown sugar)
  • Pinch of Salt
  • 3/4 Cup Buttermilk
  • One Egg
  • 70 Grams Chopped Butter
  • 1 Cup Mashed Pumpkin (Pre-cooked: roasted or steamed)
  • 2 Cup Chopped Pumpkin (Pre-cooked: roasted or steamed)
  • 2 Cup cubed Feta
  • Three sprigs of Rosemary
  • 1 and 1/2 teaspoon ground Caraway Seeds
  • 1/2 Teaspoon ground Nutmeg
  • 1/2 Teaspoon ground Coriander 
  • 1/4 Cup Quinoa 
  • 2 Teaspoons Maca Powder

     So put your hair up, wash your hands and let the cooking begin!

  1. Pre-heat oven to 180 degrees Celsius fan forced (approx. 392 Fahrenheit)
  2. Mix caraway, nutmeg, coriander, sugar, salt, maca powder and one spring of rosemary roughly chopped in a large bowl, sift in flour.
  3. Add in chopped butter and blend until it becomes a breadcrumb-like consistency. (I had to use a mixture of butter, margarine and olive oil to scrape the 70 grams so don't stress if you do the same!)
  4. Add mashed pumpkin, egg and buttermilk and blend until combined.
  5. Add one cup chopped pumpkin, one spring chopped rosemary and one cup feta and mix with wooden spoon.
  6. Oil your loaf mould with olive oil (or butter) and pour in the mixture.
  7. Decorate with Quinoa, left over feta, rosemary and pumpkin.
  8. Place in oven for 25-30 minutes or until cooked (my loaf took over 50 minutes which i put down to the mould I used not conducting heat well!)
  9. Serve and enjoy!

And so for the final result!

If (more like when) I do this recipe again I would definitely use a metal loaf mould. The ceramic just didn't transfer the heat properly and for that reason the cooking time stretched out longer than it should have. This also seems to have effected the loaf in that it didn't rise well. Along with changing the mould I might up the amount of self raising flour.

In any case it is a delicious loaf; full of flavour and warmth. For my friends in the southern hemisphere this would accompany a soup perfectly on a cold night in. For you northern hemispherians serve it cold with cold meat and salad for a refreshing meal!

  2. Wow this recipe looks absolutely amazing and healthy as well! I wish I was more adventurous in the kitchen but I always feel like I'm so tied down with other activities outside of the house that I don't have to energy to buy ingredients and try something new to cook :( Perhaps I will make that a goal for myself in the near future!

      It can be so difficult try new kitchen related things because it's often the last thing you have energy for - I really know! This year I made a resolution to try and cook more healthy and exciting things- so i downloaded all the healthy cooking apps and the like! Hah It has actually been pretty fun :) But if you did ever have the energy to try it could totally substitute out some of the ingredients for ones you have lying around?
